I spent Sunday making these traditional Australian cakes while listening to The Beautiful Girls and dreaming of summer. Recipe: Cake 2 cups flour 2 tsp baking powder 1/4 tsp salt 1/2 melted butter 3/4 cup sugar 2 eggs 2 tsp vanilla 1/2 cup milk
Icing 3 cups confectioners sugar 1/3 unsweetened cocoa powder 1 tsp vanilla 1/2 milk 1/2 boiling water Coating 2 cups unsweetened shredded coconut Cake - Preheat oven to 350 degrees and butter and flour a 8 inch square pan.
- Mix flour, baking powder and salt.
- In a separate bowl mix butter, sugar, eggs vanilla and milk.
- Add the flour mixture in the liquid mixture in three parts
- Place the mixed ingredient into the pan. Take the time to make the smooth the top with an offset spatula.
- Bake for 20-25 minutes, until a toothpick comes out clean.
- Cool the cake for 10 minutesi in pan
- . Remove from pan and cool.
- Once cooled place in the fridge for 2 hours (or overnight)
Icing- Boil water.
- Combine sugar, cocoa, vanilla, milk and boiling water.
- Whisk the ingredient until there are no more lumps.
Assembling- Cut your cake into 16 pieces.
- Place the coconut in a shallow bowl.
- Have a tray ready to put your finished Lamingtons on.
- Dip one cake at a time into the icing and then coat with coconut, repeat with each cake.
