Lamingtons

I spent Sunday making these traditional Australian cakes while listening to The Beautiful Girls and dreaming of summer.
Recipe:
 
Cake
2 cups flour 
2 tsp baking powder
1/4 tsp salt
1/2 melted butter
3/4 cup sugar
2 eggs
2 tsp vanilla 
1/2 cup milk

Icing 
3 cups confectioners sugar 
1/3 unsweetened cocoa powder 
1 tsp vanilla
1/2 milk
1/2 boiling water 
 
Coating 
2 cups unsweetened shredded coconut 
Cake
  1. Preheat oven to 350 degrees and butter and flour a 8 inch square pan.
  2. Mix flour, baking powder and salt. 
  3. In a separate bowl mix butter, sugar, eggs vanilla and milk. 
  4. Add the flour mixture in the liquid mixture in three parts 
  5. Place the mixed ingredient into the pan. Take the time to make the smooth the top with an offset spatula.
  6. Bake for 20-25 minutes, until a toothpick comes out clean. 
  7. Cool the cake for 10 minutesi in pan
  8. . Remove from pan and cool.
  9. Once cooled place in the fridge for 2 hours (or overnight)   
Icing
  1. Boil water.
  2. Combine sugar, cocoa, vanilla, milk and boiling water. 
  3. Whisk the ingredient until there are no more lumps. 
Assembling
  1. Cut your cake into 16 pieces. 
  2. Place the coconut in a shallow bowl. 
  3. Have a tray ready to put your finished Lamingtons on. 
  4. Dip one cake at a time into the icing and then coat with coconut, repeat with each cake. 
  5. Store in an airtight container for several days and enjoy!

Peanut Butter Cookies for Lily

Sorry I haven't been adding any new recipe's lately but as many of you already know Paul and I have been dedicating our extra time to taking care of our sweet foster dog Lily. Lily leg is injured and is not allowed to participate in many of her favorite pass times such as playing fetch and climbing Mont Royal therefore to keep her spirits up I have been spoiling her with tasty treats! Our local pet store Croque En Bol has some tasty homemade dog cookies  that Lily absolutely adores.





My friend Aaron and I have created some of our own homemade 
     peanut butter doggy treats.

Recipe:
1 1/2 cups water
1/2 cups canola oil 
2 medium eggs
4 tbls natural peanut butter
2 tsp vanilla
1 1/2 cups whole wheat flour
1 1/4 white flour
1/2 cornmeal
1/2 cup oats
  1. Preheat oven to 375F
  2. Mix water, eggs, peanut butter and vanilla. Add flours, cornmeal and oats.
  3. Knead the dough on a floured surface until it is about 1/2 inch thick and cut shapes using cookie cutters.
  4. Bake for 20 minutes.
